Sausage Casserole
Sausage Casserole is an moderately easy dinner. Made with 12 oz. cooked turkey breakfast sausage, 3 oz. hot mexican style velveeta cheese, cubed, 1 c. cream of mushroom soup, 1 c. uncooked brown rice and 1 bell pepper, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook rice according to package directions, approximately 45 minutes.
In microwave or a sprayed nonstick skillet, cook bell pepper and onion until tender.
Put this in a large mixing bowl and set aside. Cook the turkey sausage; drain.
Mix with the cooked vegetables.
Add the cheese to the hot mixture; stir until cheese is melted.
Add drained mushrooms, pimentos, soup and cooked rice.
Mix well.
Bake at 375Β° until hot, bubbly and slightly browned.
Makes 6 large servings.
