Sausage Bean Chowder
Sausage Bean Chowder is an moderately easy dinner. Made with 1/2 lb. pork sausage, 1 (16 oz.) can kidney beans, 1 1/2 c. canned tomatoes, 2 c. water and 1 small onion, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook pork sausage (casing removed) in skillet until brown. Pour off fat.
In a large kettle, combine kidney beans, tomatoes, water, onion, bay leaf, salt, garlic, thyme and pepper. Add sausage.
Simmer, covered, 45 minutes.
Add potatoes and green pepper.
Cook, covered, 15 minutes or until potatoes are tender. Remove bay leaf and serve.
