Sauerkraut Salad
Sauerkraut Salad is an moderately easy dinner. Made with 1 can (no. 2 1/2 size) sauerkraut, 1 c. sugar, 1/4 c. vinegar, 1/4 c. onions, chopped and 1/4 c. celery, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Drain off liquid from the sauerkraut, put sugar and vinegar in saucepan.
Heat this to a rolling boil.
To the drained kraut add onion, celery, green pepper and pimento.
Add the heated liquid to the vegetables; stir until blended.
Leave for 24 hours to improve flavor.
This keeps several days in the refrigerator.
