Sauerkraut Salad
Sauerkraut Salad is an moderately easy dinner. Made with 1 large can sauerkraut, drained, 1 c. green pepper, chopped fine, 1 c. onion, chopped fine, 1 c. celery, chopped and 1 (3 oz.) jar pimento, chopped (optional), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine sugar and vinegar in saucepan and bring to a full boil over medium heat until sugar is dissolved.
Mix remaining ingredients in a large, glass dish.
Pour vinegar mixture over sauerkraut mixture.
Let stand 24 hours in refrigerator.
This will keep for 3 to 4 weeks in refrigerator.
Very good with pork dishes or as a relish on hot dogs or hamburgers.
