Satsuma Salad
Satsuma Salad is an moderately easy dinner. Made with 10 to 12 large satsumas, 4 tbsp. powdered sugar, 1 c. shredded fresh coconut (frozen or packaged is okay), 1 c. sour cream and 1 (no. 2) can chunk pineapple, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Peel the satsumas and cut crosswise into slices.
Sprinkle powdered sugar over satsuma slices.
Drain pineapple.
Mix all ingredients together and let stand in refrigerator overnight (or at least 3 to 4 hours).
To serve, spoon mixture onto lettuce leaves.
