Sandra's Vegetable Casserole
Sandra'S Vegetable Casserole is an moderately easy dinner. Made with 2 (10 oz.) boxes mixed vegetables or 1 big bag vegetables, 3/4 c. mayonnaise, 1 c. shredded sharp cheddar cheese, 1 c. celery and 1 c. onions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook vegetables and drain (can be cooked in microwave).
In a separate bowl, mix the other ingredients.
Melt 1 stick of butter or margarine.
Add about 14 or more crushed saltine crackers (enough to thicken butter).
Put vegetables in casserole dish.
Add rest of ingredients and stir all together.
Pour melted butter with crushed crackers over the top.
Bake in 350Β° oven for 30 minutes. Will serve 6 to 8 people.
