Salsa Chicken
Salsa Chicken is an moderately easy dinner. Made with 4 chicken breasts, 1 tsp. paprika, 1 tsp. chili powder, 1 tsp. garlic powder or salt and 1 1/2 tsp. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Blend paprika, chili powder, garlic salt or powder and flour. Sprinkle mixture on both sides of chicken breasts.
Saute onion and green pepper in olive oil; remove.
Brown chicken breasts, then cook for about 10 minutes.
Add onion, green pepper and jar of salsa.
Cover; simmer for 20 to 25 minutes.
Remove lid.
Add cheese (enough to cover chicken).
Simmer 2 to 3 minutes.
Serve over rice.
