Salsa Chicken
Salsa Chicken is an moderately easy dinner. Made with 4 boneless chicken breasts, 1 tbsp. olive oil, 1/3 c. almonds, chopped, 1 garlic clove, minced and 1 c. salsa, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine salsa, currants, water, honey, cinnamon and cumin and mix. Heat oil in skillet. Cook almonds for 1 to 2 minutes. Set aside.
Add garlic. Cook for a minute or less and then add chicken, cooking until browned on both sides. Add the salsa mixture to the chicken. Reduce heat and put on cover. Simmer for 15-20 minutes until chicken is done. Add almonds and stir. Serve with rice or couscous. Serves 4.
