Salmon Pancakes
Salmon Pancakes is an moderately easy dinner. Made with 1 lb. can salmon, 1 grated onion, 1/4 c. bread crumbs, 1/2 c. cold, mashed potatoes and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine grated onion with mashed potatoes.
Add salmon and egg.
Add bread crumbs to mixture so that it is firm, but not dry. Shape it flat on large spatula and slide it into preheated oil in frying pan.
Fry about 1 minute on each side until brown.
Serve hot.
(Can use leftover cooked fish instead of salmon.)
