Salmon Medley
Salmon Medley is an moderately easy dinner. Made with 1 1/2 c. cooked salmon or canned, flaked, 2 boiled potatoes, diced, 2 tbsp. green, yellow and/or red sweet peppers, chopped, 1/4 c. onion, chopped and pinch of cayenne pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a bowl, combine all ingredients, except olive oil and cream.
In a skillet, heat olive oil.
Add salmon mixture and flatten with back of a spatula.
When the mixture begins to develop a crust on the bottom, flip over with spatula.
Add cream and turn up heat to thicken sauce and brown other side quickly. Garnish with avocado slices and add salsa to taste.
Makes 2 servings.
