Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 2 (8 oz.) cans salmon, 1 c. mashed potatoes, 2 eggs, 1/2 c. diced bell pepper and 1/2 c. onions (either yellow or green will do), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Drain salmon; remove bone and skin.
Flake in a large mixing bowl.
Add mashed potatoes and eggs.
Add bell peppers and onions.
Form into palm-sized balls.
Roll each ball in the corn meal.
