Salmon Croquettes
Salmon Croquettes is an moderately easy dinner. Made with 1 large can salmon, 1/2 c. onion, chopped (optional), 2 eggs, 1 1/2 c. cracker crumbs and 1/2 c. meal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Remove dark membrane and bones from salmon.
Mix salmon, eggs, onion, cracker crumbs, meal, salt and pepper.
Form into patties and fry in hot oil until brown on both sides.
May be formed into cone shaped croquettes, rolled in seasoned bread crumbs and baked. You may top with melted cheese or your favorite cheese sauce.
