Salmon Casserole
Salmon Casserole is an moderately easy dinner. Made with 1 c. elbow macaroni, 1 can condensed cream of mushroom soup, 2/3 c. evaporated milk, 1 (4 oz.) jar pimentos, drained and chopped and 1 large can pink salmon, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook macaroni in 6 cups of boiling water (salted) for 12 minutes; drain, but do not rinse.
While macaroni is cooking, combine mushroom soup, evaporated milk and pimentos.
Add liquid from salmon, the salmon flaked in large chunks and 1/2 the grated cheese.
Mix well.
Heat on low heat.
Stir in macaroni.
Pour into oiled 6-cup baking dish.
Combine remaining cheese and crumbs; sprinkle over salmon and macaroni mixture.
Bake for 30 minutes at 350Β°.
