Russian Mints
Russian Mints is an moderately easy dinner. Made with 1 c. butter, 2 c. powdered sugar, 4 sq. chocolate, melted, 4 whole eggs and 1 tsp. peppermint flavor, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cream butter and powdered sugar together.
Add eggs, one at a time, beating after each.
Add flavoring and chocolate.
Spoon half of wafers into bottom of cupcake liners.
Spoon the chocolate mixture on top and cover with the rest of wafer crumbs.
Top with dab of whipped cream and cherry.
Place in freezer.
Makes about 20.
