Rum Cashews
Rum Cashews is an easy dinner. Made with 1 c. sugar, 3/4 c. rum, 2 c. whole unsalted cashews and 1/4 c. butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine sugar and rum in medium size saucepan.
Bring to boil; cook 3 minutes or 234Β° on candy thermometer.
Remove from heat. Immediately add cashews and stir to coat.
Return to medium heat and stir constantly to re-melt sugar.
When sugar is golden brown, remove from heat and stir in butter.
Spread on well oiled cookie sheet to dry.
Break apart with fork.
