Ruby Rhubarb Salad
Ruby Rhubarb Salad is an moderately easy dinner. Made with 2 c. diced fresh rhubarb, 1/2 c. sugar, 1/4 c. water, 1 (6 oz.) pkg. strawberry jell-o and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Saucepan, combine rhubarb, sugar and water. Cook over medium for 3 minutes until tender.
Drain, reserving syrup.
Enough water to syrup to equal 2 cups. Return and bring to a boil. Stir in Jell-O until dissolved. Add cup cold lemon juice. When set, add rhubarb, cream cheese and banana. Turn into 6 cup mold or 9 x 13-inch pan.
