Roman Noodles
Roman Noodles is an moderately easy dinner. Made with 1/2 c. chopped onion, 1 green pepper, chopped, 2 tbsp. vegetable oil, 1 (4 oz.) can sliced mushrooms (undrained) and 2 (8 oz.) cans tomato sauce, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine onion, green pepper and oil in a 2-quart casserole. Cook in microwave on Full power for 2 to 3 minutes, until onion and green pepper are tender.
Stir in mushrooms with liquid, tomato sauce and seasonings.
Cook in microwave, covered, on Full power for 3 minutes and heated through.
Stir in noodles and water.
Cook in microwave, covered, on Full power for 9 to 12 minutes, until noodles are tender.
Stir halfway through cooking time.
Stir in the peas.
Sprinkle with Parmesan cheese before serving.
Serves about 4 to 5 people.
