Rolled Sole
Rolled Sole is an moderately easy dinner. Made with 6 to 8 sole fillets, 1 c. monterey jack cheese, shredded, 1/4 c. fresh parsley, chopped, 1 pkg. fresh spinach, chopped and 3 to 4 green onions, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Dip sole in milk, then in bread crumbs.
Mix remaining ingredients and place 1 to 2 heaping spoonfuls in center of fillet.
Roll up and place, seam side down, in baking dish.
Bake at 350Β° for 20 to 30 minutes.
