Ro-Tel Potato Casserole
Ro-Tel Potato Casserole is an easy dinner. Made with 7 or 8 potatoes, 1 lb. pasteurized cheese spread (velveeta), 1/4 cup margarine, 1 (10 oz.) can ro-tel tomatoes and 1 small onion, diced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Boil and cool potatoes.
Slice potatoes with skin on and put in 2 quart casserole dish.
Melt and mix remaining ingredients. Pour all this mixture over potatoes.
