Risotto
Risotto is an moderately easy dinner. Made with 1 medium onion, diced, 1/2 c. butter or margarine, 1 c. uncooked long grain rice, 1 3/4 c. broth (chicken or beef) and 1/2 c. sherry, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute onion in 1/4 cup butter in large skillet until golden brown.
Add rice and stir until rice turns yellow.
Add broth and sherry.
Bring to a boil, then reduce heat.
Cover and let simmer 15 to 20 minutes, until liquid is absorbed.
Add remaining 1/4 cup butter and stir in cheese.
Makes 6 servings.
