Ripe Olive Rice
Ripe Olive Rice is an moderately easy dinner you can prepare in about 1 hour 16 minutes. Made with . weber sausage, small onion, c. raw white rice, (10 1/2 oz.) can chicken broth and c. diced tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook crumbled sausage until lightly browned.
Add onion and garlic; continue to cook until onion is tender.
Stir in rice. Add broth, tomatoes, mushrooms, olives, oregano, salt and pepper. Heat to boiling.
Reduce heat, cover and cook slowly for 20 minutes, if raw rice is used.
(Leftover, cooked rice may be used).
Heat thoroughly over low heat.
Serves 4 to 6.
