Soften Ricotta cheese. Beat the eggs into the Ricotta. Add sugar, vanilla, flour, salt and baking powder; mix well. Heat oil.

Fry until golden brown

3 minutes). Remove with slotted spoon. Drain on paper towels.
Cool and roll in confectioners sugar.
