Rich Rice
Rich Rice is an moderately easy dinner. Made with 4 c. cooked rice, divided, 2 tbsp. butter or margarine, 1 onion, chopped, 8 oz. fresh mushrooms and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Spoon half of the rice in a buttered, shallow 2-quart baking dish.
Melt the butter in a large skillet with onion, mushrooms, lemon juice and seasonings.
Cook over medium heat until onion is soft.
Remove from heat; stir in sour cream.
Spread mixture over rice.
Cover with spinach.
Top with remaining rice.
Sprinkle with cheese.
Dust with paprika.
Bake at 350Β° for 30 to 35 minutes or until heated.
