Rice Pudding is an moderately easy dinner. Made with 1 3/4 c. rice, 6 c. water, pinch of salt, 2 eggs and 1 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Bring rice, water and salt to boil.

Cover and cook until done.

While rice is steaming, mix 2 eggs, sugar and vanilla. Also cornstarch and evaporated milk.

When rice is done, add 1 quart milk to rice.

Bring to boil again, stirring constantly as it tends to scorch.

When it has come to boil, add second mixture. Pour into casserole and sprinkle with cinnamon.
