Rice Ortega
Rice Ortega is an moderately easy dinner you can prepare in about 1 hour 8 minutes. Made with c. chopped onions, . butter, c. cooked rice, small jalapeño pepper, finely ground (optional) and c. sour cream, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute onions in butter until light brown.
Add the cooked rice, jalapeño (if used), the cottage cheese, Longhorn cheese and crumbled bay leaf.
Alternate layers of rice mixture with strips of the chili peppers to form 4 layers in a greased casserole. Bake in a 375° oven for 25 minutes.
Top with 1/2 cup grated Longhorn cheese.
Bake for 10 minutes more.
