Rice O Verde
Rice O Verde is an moderately easy dinner. Made with 1 (13 3/4 oz.) can chicken broth, 1/4 c. water, 1 c. uncooked long grain rice, 1 tsp. salt and 10 oz. frozen chopped spinach, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In large saucepan, bring broth and water to boil.
Add rice and salt; when boiling reduce to low.
Cover and cook 10 minutes; add spinach and dill pushing spinach down into rice.
Cover and cook 10 to 15 minutes longer until rice is tender and water absorbed.
Remove from heat and let stand 3 to 5 minutes.
Before serving, stir spinach and cheese into rice.
Makes about 4 1/2 cups.
Good as a starch and vegetable.
