Saute onion, peppers and mushrooms in half stick of margarine. Boil rice, add onion, pepper and mushrooms to rice, add corn and other half stick of margarine.
Season with salt and pepper and place in microwave to heat.
You can also make it a main dish by adding fried scallops or chunked chicken.
