Rice Casserole
Rice Casserole is an moderately easy dinner you can prepare in about 1 hour 2 minutes. Made with c. cooked rice (1 c. raw equals 3 c. cooked), pt. sour cream, (4 oz.) can chopped green ortega chilies, (4 oz.) can green chili salsa and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Use buttered flat 8 x 8-inch pan.
Combine rice, sour cream, chilies, salsa, salt and pepper.
Put a layer of rice combination and about 1/2 pound Jack cheese, shredded.
Finish with rice, top with grated Cheddar cheese.
Bake at 325° for 1/2 hour or 300° for 45 minutes.
Can be combined the day before serving and held in refrigerator for baking.
