Rice Casserole
Rice Casserole is an moderately easy dinner. Made with 1 c. rice, 2 1/2 c. tomato juice, 1/2 c. onion, chopped, 1/2 c. green peppers, chopped and 1 lb. raw ground meat, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Rinse and drain rice, sprinkle with salt and pepper.
Pour 1 c. tomato juice over rice, then sprinkle with the onion, pepper, and celery (if wanted).
Then the meat, water, and 1 1/2 c. tomato juice.
Cut the bacon in 1/2 and put on top.
Cover and bake at 350Β°F for 1 hour.
Uncover and bake for another 1/2 hour or until bacon is crisp.
