Rhubarb Upside-Down Cake
Rhubarb Upside-Down Cake is an easy dinner. Made with 1 pkg. yellow cake mix, 3/4 c. diced rhubarb, 1 (3 oz.) pkg. strawberry jell-o, 1 c. sugar and 1 c. miniature marshmallows, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease a 13 x 9-inch pan and place rhubarb, dry Jell-O, sugar and marshmallows evenly over bottom.
Mix cake mix as directed. Pour over all.
Bake at 350Β° for 50 or 60 minutes.
Invert onto serving tray.
Before serving, top with whipped topping.
Can be frozen.
