Rhubarb Upside Down Cake
Rhubarb Upside Down Cake is an easy dinner. Made with 1 yellow cake mix, 4 c. rhubarb, cut in 1 inch pieces, 1 1/2 c. sugar, 4 c. miniature marshmallows and 1 small box strawberry jell-o, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Spray 9 x 13-inch pan with Pam.
On bottom of pan, put layer of rhubarb.
Sprinkle on sugar.
Add marshmallows; then sprinkle on Jell-O.
Top with cake mix that has been made into batter as directed on package.
Bake at 350Β° for about 45 minutes.
Serve hot with whipping cream or ice cream.
