Rhubarb Salad
Rhubarb Salad is an moderately easy dinner. Made with 3 c. diced rhubarb, 1/2 c. sugar, 1/4 tsp. salt, 1 (6 oz.) pkg. strawberry jello and 1 1/2 c. cold water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put rhubarb, sugar and salt in pan on low heat.
Do not stir or add water.
When tender, quickly bring to a boil.
Remove from heat and add jello.
Dissolve.
Add remaining ingredients.
Chill until slightly thickened and spoon into molds.
Serves 8.
