Rhubarb Pudding
Rhubarb Pudding is an moderately easy dinner. Made with 1 qt. rhubarb, cut up, 1 c. sugar, 1/4 c. melted butter, 1 tsp. vanilla and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix rhubarb and 1 cup sugar.
Place in a 2-quart baking dish. Combine melted butter, vanilla, eggs, flour, baking powder, 1/2 cup sugar and salt.
Pour over rhubarb.
Bake at 375Β° for 45 minutes or until done.
This will be a bit soft inside.
Good served warm with maple syrup.
