Rhubarb Pie is an easy dinner. Made with 3 tbsp. flour, 1 c. sugar, 1 egg, beaten and 2 c. rhubarb, cut into small pieces, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sift flour and sugar together; add egg.
Beat thoroughly and add rhubarb.
Line pie pan with pastry and pour in filling.
Cover with top crust or lattice and bake in a very hot oven (425°) for 10 minutes.
Reduce temperature to moderate (350°) and bake 35 minutes longer.
Makes one 9-inch pie.
