Rhubarb Crumble

Made with 4 c. diced rhubarb, 1 c. sugar or equivalent in honey, 1/2 pkg. strawberry jell-o (3 tbsp.), 1 pkg. jiffy cake mix (white) and 1 c. boiling water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Spread diced rhubarb evenly in bottom of a 7 x 11-inch pan. Sprinkle 1 cup of sugar and Jell-O powder over the top, then the Jiffy cake mix.
Pour the hot water over the contents and drizzle the margarine.
Bake for 1 hour in 350Β° oven.
May be served with whipped cream or ice cream.
