Rhubarb Cake
Rhubarb Cake is an moderately easy dinner. Made with 1/2 c. butter, 1 1/2 c. brown sugar, packed, 1 egg, 1 tsp. vanilla and 1 c. buttermilk, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Beat butter, sugar, egg and vanilla until creamy.
Stir soda into buttermilk; add to sugar mixture alternating with flour. Stir in rhubarb.
Spread in greased and floured 9 x 13-inch pan. In small bowl, combine 1/2 cup sugar, 1 teaspoon cinnamon and 1 tablespoon melted butter.
Sprinkle over batter.
Bake at 350Β° for 40 minutes.
