Rhubarb Cake
Rhubarb Cake is an moderately easy dinner. Made with 2 c. white sugar, pinch of salt, 1/2 c. oil, 1 large egg and 1 c. sour milk (1 tbsp. vinegar in milk), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix all ingredients except rhubarb.
Mix a little flour in rhubarb, then fold in cake batter.
Pour in 9 x 13-inch loaf or oblong pan; sprinkle top with 1/2 cup brown sugar and 1 teaspoon cinnamon, mixed together.
Nuts are optional.
Bake at 350Β° for about 50 minutes, until done.
