Red Rice
Red Rice is an moderately easy dinner. Made with 1 large onion, chopped, 1 large bell pepper (green), chopped, 1 15 oz. can tomato sauce, 1 15 oz. can chopped tomatoes and 3 15 oz. cans of water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cover bottom of pot in bacon grease.
Add chopped onion and bell pepper and saute until tender.
Add tomato sauce, chopped tomatoes and 2 cans of water. Salt and pepper to taste. Add 4 tbsp. of sugar. Bring to a boil. Add rice and bring to a boil again.
Turn heat down and simmer until rice is tender, but not dry, stirring occasionally. There should be a little juice in the pot.
