Red Onion Pizza
Red Onion Pizza is an moderately easy dinner. Made with 1/3 c. each finely chopped onion, carrot and celery, 1/3 c. olive oil, 2 tsp. salt, pinch of pepper and 2 c. canned tomatoes (with juice), roughly chopped, this recipe delivers authentic, satisfying flavors. Saute the vegetables in oil about 5 minutes. Add salt, sugar and tomatoes. Simmer 45 minutes, stirring occasionally. Preheat oven to 400Β°.
Spread 1/4 cup sauce over two 12-inch pizza shells to within 1/4-inch of edge.
Sprinkle with the cheese and top with the onion. Bake 15 minutes or until the crust is golden brown. Makes 2 medium pizzas.
