Red Flannel Hash
Red Flannel Hash is an moderately easy dinner. Made with 6 slices salt pork, 1 c. beets, cooked and chopped, 3 c. cooked potatoes (add salt and pepper), 1 1/2 c. cooked corned beef and 1 onion, chopped, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Fry pork until crisp.
Remove pieces and retain as a garnish. Combine beets, potatoes, salt, pepper, corned beef, onions and milk.
Spread mixture in skillet in which pork was fried.
Brown slowly, then turn and brown on other side.
Serve with pork on top.
