Raspberry Mint Cooler
Raspberry Mint Cooler is an moderately easy dinner. Made with 9 c. water, divided, 1 to 1 1/2 c. coarsely chopped fresh mint, 1/2 c. sugar, 3 (10 oz.) pkg. frozen sweetened raspberries and 2 1/4 c. lemonade concentrate (undiluted, 18 oz.), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
In a large saucepan, bring 3 cups water, mint and sugar to a boil.
Reduce heat; simmer, uncovered, for 10 to 15 minutes.
Stir in raspberries, lemonade concentrate and remaining water.
Refrigerate overnight.
Strain raspberry mixture, reserving liquid.
Press berries and mint through a sieve; discard seeds and mint.
Combine raspberry juice with the reserved liquid.
Serve over rice.
