Mix well mashed potatoes, yeast, warm water, salt and sugar. Let stand for 20 minutes.
Add well beaten eggs and shortening to first mixture and beat well.
Add flour enough to handle easily. Knead.
Let rise double in bulk.
Roll out on floured board.
Cut out doughnuts.
Let rise double again.
Fry in hot oil.
Drain on rack or paper towels.
Sugar or glaze while still warm.
