Quick Vegetable Medley is an moderately easy dinner. Made with 1 (16 oz.) can italian-style stewed tomatoes, 1/4 to 1/2 c. zucchini, sliced and chopped, 1/4 to 1/2 c. yellow squash, sliced and chopped, 1/4 to 1/2 c. mushrooms, sliced and chopped and 1/4 to 1/2 c. green/red/yellow peppers, sliced and chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In large skillet, saute stewed tomatoes and fresh vegetables until vegetables are tender-crisp.
Add salt, pepper and oregano to taste.
Serves 3 to 4.
