Quick Vegetable Beef Soup
Quick Vegetable Beef Soup is an moderately easy dinner. Made with 1 lb. ground beef, 1/4 c. chopped onion, 4 c. beef broth, 1 (10 oz.) pkg. frozen mixed vegetables and 1 (7 1/2 oz.) can tomatoes, cut up, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a large Dutch oven or kettle, cook beef and onion until beef and onion are tender.
Drain fat.
Stir in beef broth, mixed vegetables, undrained tomatoes, potato, celery, marjoram, oregano, salt, pepper and bay leaf.
Bring to boil; reduce heat.
Cover; simmer for 15 to 20 minutes or until vegetables are tender. Discard bay leaf.
Makes 4 main dish servings.
