Quick 'n Easy Salmon Patties
Quick 'N Easy Salmon Patties is an moderately easy dinner. Made with 1 (15 to 16 oz.) can pink salmon or 2 cans tuna, 1 egg, beaten, 1/3 c. chopped onion, 1/2 c. flour and 1 1/2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Drain salmon or tuna; set aside 2 tablespoons of the juice. In a medium mixing bowl, mix salmon, egg and onion until sticky. Stir in the flour.
Add baking powder to salmon or tuna juice. Stir into salmon mixture.
Form into small patties and fry until golden brown (about 5 minutes) in hot Crisco.
Serve with tartar sauce or Caesar salad dressing.
