Quick Luscious Coconut Cake
Quick Luscious Coconut Cake is an moderately easy dinner. Made with 1 pkg. duncan hines yellow cake mix, 2 eggs, 1 1/2 c. buttermilk, 1/2 tsp. soda and 2 (6 oz.) pkg. frozen coconut, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix cake mix with eggs, buttermilk and soda.
Bake in two layers until done.
Split with thread into 4 layers.
Fill and frost with frosting which is made by whipping sour cream until it is double in bulk.
Add sugar and whip thoroughly until dissolved. Fold in Cool Whip.
Fold in 1 1/2 packages of thawed coconut. Fill and stack layers and frost sides and top.
Then sprinkle with remaining 1/2 package coconut.
