Quick Cranberry Pie
Quick Cranberry Pie is an moderately easy dinner. Made with 4 c. cranberries, 2 c. sugar, 1 c. chopped pecans, 2 large eggs and 1 c. unsifted all-purpose flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grease a 10-inch quiche or pie plate.
Spread cranberries in bottom of dish.
Sprinkle with 1 cup sugar and the pecans.
Beat eggs until foamy.
Add remaining sugar and beat until blended.
At low speed beat in flour, shortening and butter.
Pour batter evenly over cranberries and nuts.
Bake at 325 degrees for 1 hour or until golden brown.
