Quick Coconut Muffins
Quick Coconut Muffins is an moderately easy dinner. Made with 1 pkg. yellow cake mix, 1/2 c. softened butter, 2/3 c. water, 3 eggs and 1 (8 oz.) can crushed pineapple, drained, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a mixing bowl, beat the cake mix and butter.
Add water, lightly beaten eggs, drained pineapple, almond and coconut extracts; mix well, then fold in coconut and pecans.
Spoon into greased or paper-lined muffin tins, filling 2/3 full.
Bake in 350Β° oven for 20 minutes.
Cool a bit before removing from pan.
