Quick Chopped Herring Appetizer
Quick Chopped Herring Appetizer is an moderately easy dinner. Made with 1 (8 oz.) jar plain herring fillets, chopped, 1 large onion, chopped, 1 large apple, peeled and chopped, 1/2 green pepper, chopped and 1 or 2 slices white bread, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine herring, juice from jar, white vinegar and sugar.
Add onion, apple, green pepper, 1 slice bread and eggs.
If mixture is too loose, add second slice bread.
Serve as a canape on rye or pumpernickel party bread.
Can be made one day in advance.
Makes 2 pounds or 12 salad portions.
