Quick Barley Soup is an moderately easy dinner. Made with 3 qt. water, 1/4 c. beef bouillon, 1 lb. beef chuck, 1/2 c. barley and 1 c. stewed or whole tomatoes, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Bring water to a boil; add bouillon and beef, a pinch at a time.
Simmer 15 minutes; add barley, tomatoes and spices.
Simmer 10 minutes, add potatoes and simmer 15 minutes.
Add vegetables and simmer until all is done.
Taste to adjust seasonings.
Add more water if needed.
